Recipe: Eggplant


  • Eggplant                           
  • Green pepper(optional)        
  • Olive Oil, one tablesspoon                     
  • Salt, l/2 tsp.
  • Onion (chopped), 2 medium size
  • Tomato, one cut into small pieces
  • Cumin, 1 tsp.
  • Garam masala, 1/2 tsp
  • Cayenne Pepper, 1 /4tsp

Cooking Time: 30 minutes
Serving: 3-4

Prick the eggplant a few times and place on a cookie sheet, roast in at 500 degree oven until soft. Peel the upper layer of the eggplant. Put olive oil in pan with chopped onion, and start stirring. Add salt, cayenne pepper, chopped tomato, cumin, garam masala and egg plant. Stir occasionally as it cooks for 5-7 minute. Garnish with fresh coriander leaves.
